SanTan Cask Process

We create our cask beer using beer that has undergone primary fermentation.  We carefully fill the casks with finished beer and a small amount of  actively fermenting beer. Once full the cask is sealed up with a bung, the sugars start the secondary fermentation producing the CO2 present in the beer. The slow secondary ferment can take 14-20 days at 55-65°F.
